Healthy in 30 minutes or less




This meal has always been one of our family favorites.  It includes vegetarian refried beans ( which means "NO LARD" ) atop a flour tortilla with fresh produce. I prefer to use Haas avocado's, yellow onion, jalapeno peppers, Roma tomato's , cilantro, fresh corn cut from the cob, a little bit of lime to keep the avocado from turning brown, sprinkled with sea salt.  If you like it hot, leave the seeds in the jalapeno.    In season, I prefer to grow my own tomatoes, peppers and onion. For a sweeter version I also add mango.
This easy dinner is quick, inexpensive and I did mention healthy?
