Christmas Cooking

Caramel or Dulce de Leche

What you need:

• 1 can (405g) Sweetened Condensed Milk
• 1 large pot with lid
• Water

Directions:

• Place the whole can of condensed milk in a pot.
• Pour water to cover the whole can. The can should be completely submerged.
• Bring to boil, cover with lid, lower heat and let it simmer for about 3 hrs.
• Remove from water and let it cool completely before opening the can. If you can't wait like me, cool it under a running tap. 

My family was not that impressed.  We thought it would be good over ice cream, or for dipping apples/wafers.  I think we thought we would open it and it would be a familiar caramel we are used to.

This is a candy our mother made for us at Christmas time.  It is tricky to make, you will need a candy thermometer.

Fried Chicken Tenders

Homemade and fried just like we like them.  I have been making these for years and my family tells me they love them.

Be sure to cut that veiny thing out of the tender...it's gross

Add some salt and pepper and they will disappear before you know it.

Jalapeno cream cheese poppers

Crescent roll, tbs cream cheese, chopped jalapeno, as much or as little as you like

Spoon into crescent and bring the edges up

Bake until golden brown

Sooooooooo good

Especially good warm
